Wine is more than simply a beverage. It is a piece of tradition and culture, inseparable from culinary heritage and the joy of shared company. Furthermore, it is an important element of aristocratic history: after all, gifting fine wine to one another was a cherished custom among the nobility, and manors frequently housed their own wine cellars. Today, such a cellar has been established in the former icehouse of Paliesius Manor—so that you, like the nobles of the past, would be able select a special wine for yourself or as a gift.

The cellar was designed following every recommendation of a wine expert. To maintain optimal humidity, the wine racks were crafted in Switzerland from moisture-absorbing lava stone, with sand gently scattered across the shelves. This prevents mold and ensures the flavor of the wine remains perfectly unchanged.

The Manor wine cellar holds over 300 varieties of select wines from France. Here, you will find champagne, crémant, and wines from a wide variety of regions: Bordeaux, Burgundy, Alsace, the Loire Valley and the Rhône Valley, Provence… and more.

We offer Bordeaux wines from the region’s most significant subregions, representing the principal wine appellations (AOC): Bordeaux Blanc, Saint-Estephe, Pauillac, Saint-Julien, Margaux, Haut-Medoc, Pessac-Leognan, Pomerol, Saint-Emillion Grand Cru, Sauternes. Here, you will find as many as 5–6 distinct wines from the exact same area, each revealing its own unique flavors and aromas.

Burgundy wines are primarily crafted from Chardonnay grapes (white) or Pinot Noir (red)—while in the Beaujolais area, they are made from Gamay grapes (red). You may also find wine produced from the Aligoté grape (though we do not currently carry it in the wine cellar).

Wines crafted from grapes grown in different areas (their respective AOCs) naturally differ, yet they can vary remarkably even between neighboring, contiguous vineyards. This relates to the concept of “terroir,” which encompasses the soil and subsoil as well as the geographical positioning (whether a slope faces south or north, the presence of rivers, valleys, hills, or plains, the local air temperatures, and so forth).

Sampling these distinct wines from different locales will allow you to compare them with one another, discovering the subtle nuances in their flavors and aromas.

This is not an event reserved solely for wine connoisseurs: everyone is welcome. And it is a wonderful opportunity to spend time together and deepen connections with friends, family members, or colleagues—perhaps even meeting new, kindred spirits!

One of the reasons wine tastings are such a special experience is the sommelier who guides them. Today, a sommelier is a wine expert and professional steward who curates the wine menu, recommends the perfect pairings for your meal, and continuously refines their knowledge and skills. But did you know that in centuries past, the sommelier was the person who tasted their lords’ wines to ensure they were not poisoned? While such precautions are no longer necessary today, a sommelier can still share untold stories and fascinating curiosities about wine and winemaking. And, of course, recommend the finest wines. At Paliesius Manor, you may also select a wine you love, and the sommelier will recommend the restaurant dish that best complements it. A harmonious pairing of wine and food invites you to discover new aromas, subtle aftertastes, and sensations, transforming dining into a truly special experience.
