Once, family and guests would gather in vibrant manor salons: by the fire, with a book or a glass, unhurriedly. At Paliesius Manor, this tradition returns in a modern form—the bar is a space to unwind and linger, whether in good company or simply with your own thoughts.

The bar at Paliesius Manor prepares a wide array of cocktails: seasonal flavors, balanced compositions, and a meticulous approach to every glass elevate the cocktail from a mere drink into a small adornment of the moment. These are drinks to be savored, whether sipping quietly alone or in conversation with a loved one.

On a chilly day, nothing brings more joy than a gently crackling fireplace. The fire sets a calm, cozy backdrop: pull up a chair, warm yourself, and let the evening unfold exactly as you wish. It is often said that fire is one of those things you can admire forever.

The library invites you to choose a book and immerse yourself in an unexpectedly discovered tale. Perhaps you will turn only a few pages, or perhaps you will finish the entire story. Reading in such an environment is more than simply reading—it is an exceptional ritual of rest.

The Paliesius bar is designed as a space for relaxation, where the most important thing is to feel entirely at ease. Drop by after a concert, following a quiet walk, or simply to linger. Enjoy the serenity as much as the good company.

We invite you to step into the bar and savor a peaceful evening at Paliesius Manor.

We offer Bordeaux wines from the most important Bordeaux subregions, reflecting the main wine appellations (AOC): Bordeaux Blanc, Saint-Estephe, Pauillac, Saint-Julien, Margaux, Haut-Medoc, Pessac-Leognan, Pomerol, Saint-Emillion Grand Cru, Sauternes. Here you will find up to 5–6 different wines from the exact same area, offering distinct flavors and aromas.

Burgundy wines are primarily produced from Chardonnay grapes (white) or Pinot Noir (red)—while in the Beaujolais area, they are made from Gamay grapes (red). Indeed, you can also find wine made from the Aligote grape (though we do not currently have it in the wine cellar).

Wines made from grapes grown in different areas (respective AOCs) vary naturally, yet they can even differ from neighboring, bordering vineyards. This is tied to the concept of “terroir,” which encompasses the soil and subsoil as well as the geographical location (whether the slope faces south or north, the presence of rivers, valleys, hills, or plains, air temperature, etc.).

Tasting different wines from different areas will allow you to compare them with one another and discover the subtle variations in flavor and aroma.
